Gokayama Shunsai Kobo Iwana

The restaurant’s fish tank is always filled with rockfish that have grown up in the cold, clear waters of Gokayama, and each time the fish is cooked, it is taken out alive so that it is always fresh.

The “iwana nigirizushi” (char nigiri sushi) and the “iwana shio yaki”(char grilled with salt) are must-try items.
