飛騨こって牛

A5ランク(最上級)の飛騨牛を使った握り寿司の専門店。観光客で賑わう上三之町にあり、いつも行列が出来ている大人気店だ。ほとんどの客が注文する人気メニューが、味わいの違う飛騨牛握り寿司を一貫ずつ楽しめる「三種盛り/1,000円」。この店にはイートインスペースがないので、横にある「咲くやこの花」店内か、店の前か、歩きながら食べることになる。なお、寿司は皿の代わりに食べられる煎餅の上に載って出てくる。

この店は、本来は郷土寿司の製造·販売店だが、飛騨牛料理もイートインとテイクアウトの両方で提供している。 ※イートインメニューには全て味噌汁・小鉢・自家製デザートが付く。この店の1番人気のメニューは、飛騨牛の握り4貫と鉄火巻6個の「飛騨牛づくし」だ。飛騨牛のサーロインをさっぱりと酢飯で味わう「飛騨牛ひつまぶし」も美味しい。

1964 年創業の老舗ステーキ店で、厳選して仕入れた等級の高い飛騨牛のみを使用している。肉を香味野菜とともに蒸して旨味を閉じ込めた後、香ばしく焼き上げる「ブレゼ＆ソテー」という独自の調理法で、最高の状態に仕上げるのがこの店の最大の特徴だ。「ハンバーグ&グリルベーコン」や「ビーフストロガノフ」などの洋食メニューも美味しい。料理長の河本氏は、フランスの三つ星レストランなどで修行を積んだ後、東京の有名ホテルの料理長などを経て、キッチン飛騨に来た一流のシェフだ。

つづみそば

1956年創業の老舗ラーメン店。豚骨、鶏油、地元産の野菜、煮干しを一晩かけてじっくり煮込んだ出汁と、特製の醤油たれを加えたスープは、澄んでいるが香りとコクがある。トッピングの叉焼は自家製で、岐阜県の高級銘柄豚の“けんとん”を使用している。なお、途中からスープに酢や辣油などを入れて味に変化をつけて食べるのもお勧めだ。
