Mitchan Sohonten Hatchobori is the oldest Okonomiyaki restaurant in Hiroshima.

The restaurant owner and chef, Mitsuo Ise , has been working for more than 60 years, and he is known as the pioneer of the modern-day sauce for the Hiroshima-fu okonomiyaki and the dough that consists of yakisoba noodles, cabbage and bean sprouts.

Of course, not only does Mitchan Sohonten Hatchoboriten has a long history, but also an outstanding taste in its okonomiyaki.

In order to bring out the flavor of the okonomiyaki, the cabbage is cut differently everyday depending on the quality and condition of the cabbage, and the dough is made simply with wheat and water in order to prevent strong flavors, which is the restaurant’s characteristic.

The plump yet crispy noodles combined with cabbage and bean sprouts creates a unity that forms and spreads a fragrant and savory flavor of the pork meat and fat.

The ingredients are moderately large and easy to eat, and the special sauce consisting of a subtle flavor of fruits enhances the taste of the okonomiyaki.

The Tokusei Special is the most popular okonomiyaki menu with squid, shrimp and rice cakes, and you can enjoy the taste of fresh seafood from this dish.

There are lots of table seats in the restaurant, but there are also bar counter seats.

In front of the bar counter seats is an iron plate, and it is recommended to sit there if you are interested in how the okonomiyaki is cooked.
